Organic and fairtrade cocoa powder
Our flavour-packed Swiss-made cocoa powder for the food industry comes from our exclusively organic cocoa processing plant. This way we can absolutely exclude any mixing with conventional goods. Our cocoa powder gives cakes, spreads, chocolate bars, glazes, muesli, ice cream, yoghurt, drinks and chocolate their rich cocoa flavour and typical colour. The cocoa comes from different countries of origin, but we use organic cocoa beans mainly from the Dominican Republic.

















Tolling – producing cocoa mass under contract

What makes good cocoa powder?
A good cocoa powder for the food industry is tasty, contains no additives and is smooth with no grey film. It does not form lumps and, depending on what it is used for, gives food a delicate cocoa flavour and typical colour. High-fat cocoa powder with a cocoa butter content of over 20% is regarded as particularly strongly flavoured and rich.
Roasting the nibs for flavourful cocoa powder
To produce maximum flavour, all the batches of beans are first analysed for their quality and sensory characteristics. Only if their quality and flavour profile correspond exactly to our high requirements are they used for making cocoa powder. We can also process customers’ own cocoa beans (tolling).
In our method of cocoa processing, we break the beans down into cocoa nibs first, and only then are they roasted. The advantages of roasting the nibs include regulated, very gentle temperature control, and maximum flexibility in defining the required roasting profile. With the perfect roasting curve, the flavour of the beans can develop to the full.

High fat or low fat cocoa powder in organic quality
Our cocoa powder is available either slightly or highly de-oiled, with a fat content of 20-22% or 10-12% respectively. Thanks to our refined processing methods with optimal temperature control, we achieve outstanding quality even with cocoa powder with a high fat content. The fat crystallisation is perfectly controlled at our plant to ensure excellent product properties such as the required level of sheen, with no grey film or lumpiness. All our cocoa powders are ideal for use in industrial food processing.


The benefits of alkalised cocoa powder
Our cocoa powders are not only available with different fat contents: they also come as alkalised or natural cocoa powder. When we are making alkalised cocoa powder, we treat the cocoa nibs with calcium carbonate or potash during roasting.
The alkalised cocoa powder is valued for its somewhat darker colour, rounded flavour and better solubility in drinks.
The benefits of natural (non-alkalised) cocoa powder
When making natural or non-alkalised cocoa powder, we do not add calcium carbonate or potash. The non-alkalised cocoa powder is a popular ingredient in foodstuffs that are intended to be as natural as possible.


Specifications for low-cadmium cocoa powder
Our low-cad or low-cadmium cocoa powder is made from cocoa beans with a low cadmium content. We analyse the cocoa powder to ensure that it complies with the relevant EU limits for cadmium in these food categories.
Fairtrade cocoa powder and other labels
Our cocoa powder is available with a range of organic and fair trade certifications. Demand from the market is showing a trend towards stricter labels such as FLO Fairtrade cocoa powders with full physical traceability. With our products, we are meeting that need and offer combinations of different labels, which also include Naturland, ROC, Fair for Life, Bio Suisse, EU Bio, NOP/USDA, Rainforest Alliance, Halal and Kosher. What’s more, we offer toll processing services, meaning that we can process our customers’ own cocoa beans, which have been certified accordingly, under contract (tolling or contract manufacturing).


Traceable cocoa powder for the food industry
Our “Made in Switzerland” cocoa powder is 100% traceable back to the smallholders. It is aimed at food manufacturers for whom traceable ingredients free from harmful substances are a high priority.
Before the cocoa powder is dispatched, samples of all products go to our in-house laboratory. There their physical and sensory properties are checked, with the results reviewed by external analysts. Only products that meet our high quality standards leave the production plant.
Cocoa beans directly from smallholders
We believe in buying our organic and fair trade cocoa beans for the food industry directly from smallholder organisations wherever possible, eliminating the need for intermediaries.
