Organic and fairtrade cocoa nibs

Our aromatic roasted organic cocoa nibs (crushed cocoa beans) are ideal for making premium quality chocolate products, cakes and biscuits, muesli and organic teas. At our own cocoa factory in Switzerland, we use nibs-roasting technology, which offers the advantage of regulated, very gentle temperature control. We only process organic cocoa beans at our cocoa factory, so any mixing with conventional products is completely ruled out. Our roasted and specially cleaned organic cocoa nibs add a rich chocolatey flavour and a delicious crunch to a whole range of products. The cocoa comes from the Dominican Republic, Madagascar and other countries of origin.

What makes good cocoa nibs?

Good cocoa nibs or crushed cocoa beans for the food industry are always roasted and are distinguished by their rich flavour and crunchy bite: they are roasted gently to give them a delicious, truly aromatic flavour profile. Good cocoa nibs contain no additives and are specially cleaned to meet the high specifications of the food industry. Cocoa nibs can be used in different ways to give food or teas a delicate chocolate flavour.

Nibs roasting technology brings out the full flavour

To bring out the full flavour of the cocoa nibs or crushed cocoa beans, all the batches of beans are analysed for their quality and sensory characteristics before processing. Only beans with a perfect quality and flavour profile are turned into our premium cocoa nibs. We can also process customers’ own cocoa beans.

In our method of cocoa processing, we break the beans down into cocoa nibs first, and only then are they roasted. The advantages of roasting the nibs include regulated, very gentle temperature control. Nibs roasting also gives us maximum flexibility to define the required roasting profile. The roasting curve can be adapted to allow the full flavour of the cocoa nibs to develop.

Cleaned sorted and unsorted cocoa nibs in organic quality

Our roasted cocoa nibs are thoroughly cleaned in a multi-stage process. The cleaned cocoa nibs are available either sorted or unsorted. Depending on their intended purpose of use, the cocoa nibs may be sorted to be 1-3 mm or 3-6 mm in size, or they may be left unsorted.

Fair trade cocoa nibs and other labels

Our roasted and cleaned cocoa nibs are available with various organic and fair trade certifications. We are seeing a trend on the market towards stricter labels such as Bio Suisse and FLO Fairtrade with full physical traceability. With our products, we are meeting that need as well as offering other certifications such as Naturland, Fair for Life, Demeter, EU Bio, NOP/USDA, Rainforest Alliance, Halal, Kosher and ROC. We are also able to process our customers’ own beanscomplying with these certifications as well as Demeter (toll processing or contract processing).

Traceable and tested cocoa nibs for the food industry

Our cocoa nibs are 100% traceable back to the smallholders. They are therefore the perfect choice for food manufacturers for whom traceable ingredients free from harmful substances are a high priority.

Before dispatch, samples of our cocoa nibs are sent to our in-house laboratory. There their physical and sensory properties are checked, along with the results of external analyses. Only products that meet our high quality standards leave the production plant.
