Organic and fairtrade cocoa mass (Liquor)

Our Swiss-made organic cocoa mass, also called cocoa liquor, comes from our exclusively organic cocoa processing plant. The product is distinguished by its full, well-balanced flavour and characteristics that make it ideal for further processing, for example, its fineness and water content (see also our cocoa mass/liquor specifications). When we roast the nibs at our plant, we define bespoke roasting profiles to ensure that the organic cocoa beans release their very best flavour. Naturally, cocoa mass or cocoa liquor with different degrees of fineness can be produced to meet individual requirements within the chocolate and food industry.

Organic single-origin cocoa mass for chocolate-makers

We obtain most of the cocoa beans for our cocoa mass or cocoa liquor from the Dominican Republic, Madagascar, Panama and Peru. Because each individual batch of beans is processed separately at our plant, there is no possibility of beans from different sources being mixed together. We specialise in single-origin cocoa masses/liquors, with the roasting profile tailored to suit each particular source, and ensure compliance with multiple labels.

Tolling – producing cocoa mass under contract

Our cocoa processing operation is highly flexible and allows us not only to make cocoa mass or cocoa liquor in large or small production runs, but also to process customers’ cocoa beans under contract (tolling). Please contact us to talk to us about your individual requirements.

Organic cocoa mass/liquor with optimised flavour profile

Before our organic cocoa beans are processed into “Made in Switzerland” cocoa mass, they are subjected to detailed analysis by our in-house quality team. Only beans with a perfect quality and flavour profile are turned into our premium cocoa mass.

At PRONATEC Swiss Cocoa Production, we use nibs-roasting technology. Nibs-roasting offers the advantage of regulated, very gentle temperature control, and maximum flexibility in defining the required roasting profile. With the perfect roasting curve, the flavour of the beans develops to the full.

Traceable Fairtrade cocoa mass/liquor

Processing each batch of beans separately means more than just customised production runs. It also means that our organic and Fairtrade certified cocoa mass can be traced right back to the smallholder organisations that produced the beans. Our cocoa mass is available with various labels, such as FLO Fairtrade with physical traceability, ROC, Bio Suisse, Naturland, Fair for Life, EU Bio, NOP/USDA, Rainforest Alliance, Halal and Kosher. We also offer toll processing services. This means that we process our customers’ own cocoa beans complying with these certifications as well as Demeter (toll processing or contract processing).

Cocoa mass/liquor is tested against specifications for characteristics such as fineness

The whole production process at our cocoa processing plant is monitored digitally. This means we can check product properties such as the fineness of the cocoa mass or liquor frequently, even during the production process, to ensure full compliance with the specifications. For chocolate-makers, we achieve an optimal fineness of 99.8% WSR (wet sieve residue) <75µm (equates to <20µm).

Before dispatch, the physical and sensory characteristics of our cocoa mass or liquor are checked in our in-house laboratory. Only products that meet our high quality standards and the parameters stated in the specifications are approved for delivery.

Liquid bulk deliveries of cocoa mass/liquor

In addition to the usual delivery formats, we also offer our customers “SECURE liquid delivery” for cocoa mass or liquor. Our storage tanks at the plant give us sufficient time to analyse the cocoa mass in detail. You can therefore be confident that the cocoa mass is guaranteed to meet your requirements when you receive it.

Cocoa beans directly from smallholders

We believe in buying our organic and fair trade cocoa beans for the food industry directly from smallholder organisations wherever possible, eliminating the need for intermediaries.

Our customers in the food industry benefit from our close relationships in the regions of origin, as we are able to guarantee the traceability of the organic and fair trade cocoa beans from the smallholders through to production.
